I love grilled veggies, growing up it was the staple of the house, rather than rice or bread or pasta. There was one thing you could count on, which is grilled veggies either in the oven or in the fridge. I ate these grilled veggies as a snack when passing the kitchen, or it was a part of the main meal, or in sandwiches.
Courgette/zucchini, aubergine/eggplant, bell peppers, mushrooms and carrots with a drizzle of olive oil, sometimes balsamic vinegar, salt and pepper placed under the grill.
These are some of the sandwiches that I like to make when grilled veggies are around:
1. Brie + Grilled Veggie
2. Cream cheese + Grilled Veggie in pita bread
4. Just plain ol’ grilled veggies and nothin’ else
They’re so moist from the oil and balsamic, that sometimes you don’t need anything else if you’ve got a good piece of bread to place it on.
